To celebrate the release of The Charmed Library, I whipped up a dessert that feels exactly like Stella Parker on a sugar high: bright, nostalgic, a little chaotic—and absolutely delightful.
This Fruity Pebbles Cheesecake is a no-bake wonder inspired by Stella’s favorite childhood cereal (because of course she still buys the fun cereals) and her charming inability to cook . . . or bake . . . or really follow a recipe at all.
But this one? Even Stella could manage it.
You'll love that no baking is required (Stella insists I say this twice.). It's also has a colorful, crunchy cereal crust and creamy cheesecake filling. If you're like me, then you'll appreciate the sweet, silly, and nostalgic feel of this dessert, just like your favorite Saturday morning cartoon lineup! It's also perfect for celebrating the magic of friendship, fiction, and second chances.
If Stella were here, she’d tell you that life’s too short to skip dessert—or color. She’d also probably eat this for breakfast, and honestly? I support her.

Fruity Pebbles Cheesecake
This no-bake cheesecake is inspired by Stella’s love of her favorite childhood cereals, as well as her inability to cook (or bake!) anything well.

Ingredients
Crust Ingredients:
3½ cups Fruity Pebbles Cereal
3 cups mini marshmallows
2 tablespoons unsalted butter
Cheesecake Filling Ingredients:
16 oz cream cheese softened
¼ cup powdered sugar
1 teaspoon vanilla extract
7 oz tub marshmallow creme
1½ cup cereal lightly chopped
Directions
In a large microwave-safe bowl, combine the cereal, marshmallows and butter. Microwave uncovered on high for 2-3 minutes. The marshmallows will begin to puff up in the microwave.
Once the marshmallows are soft, remove the bowl from the microwave, and stir the ingredients until all of the cereal is coated with melted marshmallows and butter. Transfer the mixture to a lightly sprayed or buttered pie plate.
Press the mixture into the pan and up the sides to form a crust. Set aside to firm while you are preparing the filling.
In a large bowl, mix together the cream cheese, powdered sugar, and vanilla until it is smooth and creamy. Add in the marshmallow creme, and continue to mix the filling together. Using a spatula, stir in the additional cereal directly into the filling until it is mixed in.
Pour the filling over the prepared crust, smoothing it with the spatula. Place the cheesecake in the refrigerator and allow it to become firm, at least 1-2 hours. (You can also place it in the freezer for about 30 minutes.)
Sprinkle extra cereal or sprinkles on top if desired.
