Cooking Through "The Baker's Man": Evelyn's Sugar Cookies


Mother, Mama, Mom, Mum, Ma—a few of the names we use for our mothers. Every mother is unique. Some are great, and we say they were “born to be mothers.” They nurture us, discipline us, hold our hands when we cry. Other mothers break our hearts, abandon us, disappoint us, and we never understand why they make the choices they do.

In chapter sixteen of The Baker’s Man, titled Sugar Cookies, Anna needs the one person who can make her feel as though even if her entire world is ending, she’s not alone—she needs her mama.

Evelyn is a no-nonsense sort of mama, and she is fiercely proud of her daughter. She applies her stern attitude not only to her child-rearing, but also to her eating habits. So, when Anna needs comfort food (even sugar-laden sweets), Evelyn is bound to offer Anna a much healthier version.

Evelyn’s Sugar Cookies

Ingredients

1 cup of raw cashews

½ cup of coconut flour

1 tbsp of all-purpose flour

¼ tsp of sea salt

½ tsp of baking soda

¼ cup of butter, melted and cooled slightly

½ tsp of vanilla

1 egg

¼ cup of honey

How to Make

  1. Do not preheat your oven. Timing is based on putting into a cold oven.

  2. Grind the cashews into flour in your food processor.

  3. Next add in the coconut flour, sea salt, baking soda, and all-purpose flour and pulse to combine.

  4. Then add the butter, vanilla, egg, and honey, and pulse until you have a cookie dough.

  5. Roll out the dough between two sheets of parchment, and cut with your cookie cutter of choice. Place cut-outs on a piece of parchment paper and bake at 350 degrees for 15 – 20 minutes.
